Our Cabernet is a blend of 93% Cabernet Sauvignon from the Montagneux Vineyard in the Malibu Hills, planted on rocky, raised seabed, on steep slopes overlooking the Pacific Ocean, blended with 7% Syrah from the Alonso Family Vineyard in the Sierra Pelona Mountains, north of Santa Clarita. The fruit was all harvested by hand, and cold soaked for 48 hours, before native yeasts kicked off the fermentation. After fermentation was complete, the wine was aged on the lees for 6 months, before it was racked and returned to French oak barrels (65% new), and aged for 16 months. 65 cases produced.
Dark chocolate, espresso, a touch of black liquorish, and hazelnut, open the festivities on the nose that is loaded with black cherry, blackberry and bramble. A supple core of black cherry and cola greet the palate with sleek, fine grained tannins that gently grip. Strawberry sundae drizzle dances on the persistent finish, that lingers and flashes a touch of earth.
